Description
The Ekstra Devisko Oljcno Olje Slovenske Istre PDO is an extra-virgin olive oil produced from a single cultivar and which should contain at least 80% of that cultivar. The allowed cultivars are Bianchera Istriana, Leccino, Buga, Carbonia, Maurino, Frantoio and Pendolino.

Production Method
The olive harvest is done manually when optimal ripeness has been achieved. Successively, the olives are transported to oil mills for the oil processing, which should happen within a maximum of 48 hours after the collecting. The olive oil is extracted from the whole olives at a temperature lower than 27°C, followed by the storage in specific countermarked containers, which have a temperature between 12°C and 20°C. Afterward, a quality check takes place, which precedes the bottling and labelling.
