Production Area
The production area of Delia Nivolelli PDO is within the territory of the municipalities of Mazara del Vallo, Marsala, Petrosino and Salemi in the Province of Trapani, in the Sicily region.
Description of product typologies
Delia Nivolelli PDO Bianco is straw-yellow in colour, at times with greenish highlights; the nose displays fragrances that range from apricot to pineapple, with hints of Mediterranean scrub; it is thick on the palate, with an acid-sapid backbone. Delia Nivolelli PDO Rosso has a ruby-red colour, varying in intensity, becoming garnet with orange reflectionswith ageing; the nose is delicate and reminiscent of fruits of the forest, with sensations of aromatic herbs; it is dry, sapid and warm on the palate, tending towards velvety with ageing and always supported by a good tannic structure. It can display Riserva on the label if the wine has undergone a minimum ageing period of 2 years, commencing January 1st of the year following that in which the grapes were produced. Delia Nivolelli PDO Spumante is pale straw-yellow in colour, at times with greenish highlights, and presents fine, lively and persistent foam; the nose is delicate with fruity notes; it is sapid, fresh and harmonious on the palate. Delia Nivolelli PDO Novello is intense ruby-red in colour; the nose is extremely fruity; it is dry, smooth and sapid on the palate, at times slightly acidulous.
Grape variety specifications
The Delia Nivolelli PDO may display the following grape variety specifications. From white grape varieties: min. 85% Grillo, Grecanico, Damaschino, Inzolia, Müller Thurgau, Chardonnay, Sauvignon, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. From red grape varieties: min. 85% Nero d’Avola, Pignatello or Perricone, Merlot, Cabernet Sauvignon, Syrah, Sangiovese, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin.
