Cortese dell’Alto Monferrato PDO Bianco is pale straw-yellow, at times with greenish reflections; the nose is gentle and persistent with notes of flowers, fresh apricot and apple; it is dry and pleasantly tart on the palate, with a slightly bitter background that is balanced by good sapidity. It can also be a semi-sparkling wine. Cortese dell’Alto Monferrato PDO Spumante is pale straw-yellow, at times tending towards greenish, with a fine and persistent perlage; the nose reveals the same characteristic fruity aromas of the still wine, and is delicate and extremely gentle, yet persistent; in the wines ranging from Brut Nature to Brut, the flavour is harmonious and balanced, with good sapidity and delicate bitter notes. The vinification and gasification of Cortese dell’Alto Monferrato PDO wines must take place within the production area; however, taking traditional and commercial situations into consideration, these operations may also be carried out within the territory of the provinces of Alessandria, Asti, Cuneo and Turin.
