Production Area
The production area of Copertino PDO is within the territory of the municipalities of Copertino, Carmiano, Arnesano and Monteroni, and parts of Galatina and Lequile, in the Province of Lecce, in the Apulia region.
Description of product typologies
Copertino PDO Rosso is ruby-red in colour, varying in intensity and tending towards orange with ageing; the nose offers a persistent fragrance of ripe red fruit, displaying a rich array of spices, and notes of minerals and aromatic herbs; it is dry on the palate, with a bitter aftertaste. It can display Riserva on the label if the wine has undergone a minimum ageing period of two years, commencing November 1st of the year in which the grapes were produced. Copertino PDO Rosé is characterised by its salmon-pink colour, which at times can tend towards pale cherry-pink; the nose is slightly vinous, distinct and with good persistence; it is dry and smooth on the palate, with a grassy undertone and pleasantly bitter aftertaste.Traditional vinification methods must be used for the transformation of the grapes destined for the production of Copertino PDO Rosé wine, which includes the static draining of the pressed grapes after 12 to 24 hours of maceration. The residue of the grapes used for the production of Rosé cannot be used for the preparation of Copertino PDO Rosso.
