The Colli di Parma PDO is reserved for the following types of wine: White (only with specification of grape variety), Red (incl. Semi-Sparkling) and Spumante. The Designation also incorporates numerous grape variety specifications.

The production area of Colli di Parma PDO is within the territory of numerous municipalities in the Province of Parma, in the Emilia-Romagna region.
Description of product typologies
Colli di Parma PDO Bianco has the colour, fragrances and flavour that are typically characteristic of the grape variety. Colli di Parma PDO Rosso has a ruby-red colour; it is strong and somewhat vinous on the nose; it is dry, sapid, harmonious and slightly fizzy on the palate. It can also be Semi-Sparkling wine and may display Riserva on the label. Colli di Parma PDO Spumante is straw-yellow in colour, varying in intensity, with fine, lively and persistent foam; the nose displays delicate and fruity fragrances; it is pleasing on the palate, ranging from dry to extra-brut. Colli di Parma PDO Spumante must be obtained exclusively through natural secondary fermentation in bottles, resting on the lees for at least 12 months; the entire elaboration process must take at least 18 months.
Grape variety specifications
The Colli di Parma PDO may display the following grape variety specifications. From white grape varieties: min. 85% Malvasia (incl. Spumante, Semi-Sparkling, Riserva), pure or with the addition of Moscato Bianco, max. 15%; min 95% Sauvignon (incl. Spumante, Semi-Sparkling, Riserva), Chardonnay (incl. Spumante, Semi-Sparkling, Riserva), Pinot Bianco (incl. Spumante, Semi-Sparkling, Riserva), Pinot Grigio (incl. Semi-Sparkling), pure or with the addition of other white grape varieties, max. 5%. From red grape varieties: min. 85% Pinot Nero (incl. Riserva), Merlot (incl. Riserva), Cabernet Franc (incl. Riserva), Cabernet Sauvignon (incl. Riserva), Barbera (incl. Riserva, Semi-Sparkling), Bonarda (incl. Riserva, Semi-Sparkling), pure or with the addition of other black grape varieties, with the exclusion of Lambrusco, max. 15%; min 85% Lambrusco (incl. Semi-Sparkling), pure or with the addition of other black grape varieties, max. 15%. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin. Colli di Parma PDO Riserva wines obtained from white grape varieties must have undergone an ageing period of at least 18 months, at least 3 of which must be passed maturing in bottles, commencing the first November following the production of the grapes. Colli di Parma PDO Riserva wines obtained from red grape varieties must have undergone an ageing period of at least 2 years, including at least 6 months maturing in bottles, commencing November 1st of the year in which the grapes were harvested.
