The production area of Colli dell’Etruria Centrale PDO is within the territory of numerous municipalities in the provinces of Florence, Arezzo, Pisa, Prato, Pistoia and Siena, in the Tuscany region.
Description of product typologies
Colli dell’Etruria Centrale PDO Bianco is pale straw-yellow, at times with greenish reflections; the nose offers delicate and fruity fragrances; it ranges from dry to mouth-filling on the palate and is sapid, lively, fresh and harmonious. Colli dell’Etruria Centrale PDO Rosso is bright, vivid ruby red, at times with medium intensity; the fragrance ranges from vinous to fruity and is fresh and delicate; it is lively and harmonious on the palate. The practice of “Governo all’uso toscano” (traditional Tuscan technique involving the slow secondary fermentation of newly racked wine with slightly dried grapes) is permitted for the production of Colli dell’Etruria Centrale PDO Rosso wines, as long as the relative operations are terminated annually before December 31st. Colli dell’Etruria Centrale PDO Rosato is pink, varying in intensity; it is fruity and fragrant on the nose; it ranges from dry to mouth-filling on the palate and is sapid and lively. Colli dell’Etruria Centrale PDO Vin Santo ranges from straw-yellow to amber-yellow; it is ethereal on the nose; it is harmonious and velvety on the palate, ranging from dry to sweet, with a pronounced roundness in the sweet wine. It may display Riserva on the label. Colli dell’Etruria Centrale PDO Vin Santo Occhio di Pernice varies from pink to amber; the nose is intense and ethereal; it is velvety, rounded and extremely smooth on the palate, ranging from dry to sweet. After careful selection, the grapes used to produce Colli dell’Etruria Centrale PDO Vin Santo must be dried naturally; the grapes must be dried in suitable areas and partial dehydration of the grapes with ventilated air is permitted, until the sugar content reaches a minimum level of 26%; ageing must take place in wooden kegs with a capacity of no more than 5 hectolitres. The wine cannot be released for consumption before November 1st of the third year following that in which the grapes were produced; Colli dell’Etruria Centrale PDO Vin Santo Riserva may be released for consumption from November 1st of the fourth year following that in which the grapes were produced. Colli dell’Etruria Centrale PDO Novello is a vivid, characteristic cherry-red colour, at times tending towards purplish; the nose is fruity and fresh; it is fresh, lively and harmonious on the palate.

Colli dell’Etruria Centrale PDO Vin Santo and Colli dell’Etruria Centrale PDO Vin Santo Occhio di Pernice wines may display Secco, Abboccato, Amabile and Dolce on the label, in compliance with EU regulations on product labelling. Colli dell’Etruria Centrale PDO Rosso wines may also display the specification Vermiglio on the label.
