The production area of Colli della Toscana Centrale PGI is within the territory of numerous municipalities in the provinces of Arezzo, Florence, Pistoia, Prato and Siena, in the Tuscany region.
Description of product typologies
Colli della Toscana Centrale PGI Bianco, alone or with specification of grape variety, is either pale yellow with green reflections or straw-yellow, varying in intensity; it is simple and floral on the nose, mainly consisting of primary and secondary aromas, and with particular grape varieties the aromatic component evolves into tertiary aromas characterised by the same; it is slightly acidulous and fresh on the palate, and when there are tertiary aromas it has a specific, persistent aftertaste. It can also be a semi-sparkling wine. Colli della Toscana Centrale PGI Rosso, alone or with specification of grape variety, can be various shades of red, tending towards garnet red with ageing; the nose offers primary and secondary aromas, and is simple with evident liveliness, becoming more complex with ageing due to the evolution of tertiary aromas, varying based on the percentage of the grape varieties used; it is young and easy on the palate, with the specific polyphenols in wines suitable for prolonged maturation improving the structure and offering a persistent aftertaste. It can also be Novello wine. Colli della Toscana Centrale PGI Rosato, alone or with specification of grape variety, is different shades of pale pink depending on the grape varieties and vinification methods used; the nose is predominantly characterised by the primary aromas of the grape variety; the acid and polyphenol components are both balanced on the palate, which is smooth thanks to the sugar content determined by defined laws.
Grape variety specifications
The Colli della Toscana Centrale PGI with specification of one of the grape varieties suitable for cultivation in the Tuscany region, is reserved for wines obtained from grapes originating from vineyards on the producer’s land made up of at least 85% of the corresponding grape variety. A maximum of 15% of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area can be used, pure or combined, to produce the above-mentioned musts and wines. In the presentation of Colli della Toscana centrale PGI wine, reference to the name of two grape varieties is permitted on the condition that the wine derives exclusively from the two indicated grape varieties, and that the quantity of grapes produced by one of the two is higher than 15% of the total. The Colli della Toscana Centrale PGI with specification of two grape varieties is reserved for wines obtained from grapes originating from vineyards on the producer’s land made up of the corresponding varieties, on the condition that the wine derives exclusively from grapes produced by the two specified varieties; the quantity of grapes produced by each of the two varieties must in any case be greater than 15% of the total and the grape variety specifications must appear on the label in descending order with respect to the actual percentage of grapes obtained from them. Colli della Toscana Centrale PGI wines with specification of grape variety must display the organoleptic properties of the specified grape variety, as well as the specific characteristics indicated for wines of the same colour.
