Production Area
The production area of Cilento PDO is within the territory of numerous municipalities in the Province of Salerno, in the Campania region.
Description of product typologies
Cilento PDO Bianco is pale straw-yellow in colour; it is delicate on the nose, with floral notes including jasmine and field grass; it is fresh on the palate, with strong salty, mineral and citrusy hints. Cilento PDO Rosso has a ruby-red colour; it displays characteristic notes of red fruit, cherry and blackberry on the nose, with more intense notes of cocoa, chocolate and tobacco developing with ageing; it is delicate and dry on the palate. It can display Riserva on the label if the wine has undergone an ageing period of at least 2 years, commencing November 1st of the year in which the grapes were produced. Cilento PDO Rosé has a delicate, bright pink colour; it displays extremely delicate fragrances on the nose, with prevailing fruity and floral notes; it is smooth, fresh and harmonious on the palate. For the transformation of grapes destined for the production of Cilento PDO Rosé, a traditional method of vinification must be used, which entails draining the pressed grapes after a limited maceration.
Grape variety specifications
The Cilento PDO may display the following grape variety specifications. From white grape varieties: min. 85% Fiano, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. From red grape varieties: min. 85% Aglianico (incl. Riserva), pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, max. 15%. The characteristics of the colour, fragrances and flavour of each specification are those typical of the grape variety and terroir of origin. Before being released for consumption, Cilento PDO Aglianico must have undergone an ageing period of at least 12 months, commencing November 1st of the year in which the grapes were produced; it may display Riserva on the label if it has undergone an ageing period of at least 36 months, 12 months of which must be in barrels, commencing November 1st of the year following that in which the grapes were harvested.
