Production Method
The basic requirement for successful Ceský Kmín PDO growth is suitable soil, i.e. loamy and sand-clay soils with a clay content of 10% to 30% and diverse levels of gravel admixture. The sowing density must be 2,25 million germinant seeds per hectare by carrying out direct sowing or sowing in covering crops by 20th June. Harvesting takes place at the time of optimum maturity and the seeds are left to dry. During this phase, records are kept of the quantity harvested, humidity and the rate of foreign matter before final drying and cleaning to the desired level. This phase comes before the true and typical cleaning process and it is carried out in the producer's own premises or in the subcontractor's cleaning plants. Before the product is marketed, the quality of production is assessed according to physical, chemical and biological properties.
Appearance and Flavour
Ceský Kmín PDO has an elongated, slightly curved shape. It is bright to dark brown, tastes spicy and has a classic aroma.
History
The Ceský Kmín PDO has been grown in Czech territories since the 1950s. It was formerly known by different names derived from the names of farmers who grew it, i.e. Havelek or Hokes. Over the years, production has strengthened in the territory and has become an essential ingredient in the Czech cuisine.
Gastronomy
The Ceský Kmín PDO can be preserved dry, in a dry place away from direct sunlight. It is the key ingredient for many recipes. It is used to season garden products such as potatoes, cabbage, vegetables, rice or legumes, soups, sauces and in meat or fish dishes. It is always used in rye bread or to decorate bakery products. This product is widely used in liqueurs and other beverages.

The product is sold as Ceský Kmín PDO. It is marketed in bags of different weight.
