The production area of Cesanese di Olevano Romano PDO is within the territory of the municipality of Olevano Romano and part of Genazzano, in the Province of Rome, in the Lazio region.
Description of product typologies
Cesanese di Olevano Romano PDO is ruby red with purple reflections, tending towards garnet red with ageing; it offers fruity tones of marasca liqueur, brushwood, cocoa and tobacco on the nose; it is warm and structured on the palate, with well-defined tannins. It can also be Amabile (semi-sweet), Sweet and Sweet Semi-Sparkling wine and may display Superiore and Riserva on the label. For the production of Cesanese di Olevano Romano PDO Semi-Sparkling wines, the secondary fermentation or gasification must be carried out in large closed recipients, and only grape must or partially fermented grape must, pure or combined, may be used. Cesanese di Olevano Romano PDO Superiore cannot be released for consumption before June 1st of the year following that in which the grapes were produced. In order to qualify as Riserva, Cesanese di Olevano Romano PDO wines must have undergone an ageing period of at least 24 months, commencing November 1st of the year in which the grapes were harvested, with at least 6 of those months maturing in the bottle.
