Description of product typologies
Cerasuolo di Vittoria PDO is bright cherry-red, with significant variations that can arrive at shades of purple; it displays clear fragrances of cherry and wild strawberry on the nose, blending with notes of marjoram and sorrel and leading to a pleasant mineral finish, offering an overall sensation of freshness counterbalanced by deeper hints of leather, typical in Cerasuolo di Vittoria PDO Classico wines; it is dry on the palate, at the same time offering a smooth body with fragrant hints of fleshy fruit, giving the wine a good fresh and sapid taste that leads to a long, persistent finish. It can display Classico on the label. Cerasuolo di Vittoria PDO wine can be released for consumption after June 1st of the year following that in which the grapes were produced. Cerasuolo di Vittoria PDO Classico cannot be released for consumption before March 31st of the second year following that in which the grapes were harvested. Grapes destined for the vinification of Cerasuolo di Vittoria PDO (including Classico) must ensure that the wine has a minimum natural alcohol level of 12.5%.
