Description of product typologies
Castelli Romani PDO Bianco is bright straw-yellow; it expresses fragrances of pear, sage and moss on the nose; it is sapid, fresh and aromatic on the palate. It can also be semi-sparkling, dry or amabile (semi-sweet). Castelli Romani PDO Rosso is medium ruby red; the nose displays fragrances of fruit, spices and aromatic herbs; it is lively and aromatic on the palate, with a fairly intense tannic flavour. It can also be semi-sparkling, Novello, dry or amabile (semi-sweet). Castelli Romani PDO Rosato is pink, varying in intensity, at times ruby red; fruity notes and intense and vinous fragrances are highlighted on the nose; it is fresh, harmonious, dry and sometimes fizzy and/or supple on the palate. It can also be semi-sparkling, dry or amabile (semi-sweet). The vinification processes, including gasification, must take place within the production area, according to the traditional methods used in the area and in order to give the wines their distinctive characteristics.
