The production area of Carema PDO is within the entire territory of the municipality of Carema in the Province of Turin, in the Piedmont region.
Description of product typologies
Carema PDO is intense ruby red with garnet red hues; it develops floral and fruity notes on the nose, with noticeable hints of rose petals and berries, in particular blueberry and blackberry; it is well-structured on the palate, with body that gives way to a fruity and slightly almondy finish. It can display Riserva on the label. Carema PDO must have undergone a minimum ageing period of 24 months (36 for Riserva wines), commencing November 1st of the year in which the grapes were produced, 12 of which must be in oak or chestnut wood. The vinification and ageing of Carema PDO must take place in the production area, which includes the entire territory of Carema and the district of Ivery in the Municipality of Pont St. Martin (Valle d’Aosta), according to the traditional methods used in the area.
