Description
The Capalbio PDO is reserved for the following types of wine: White, Red, Rosé and Vin Santo. The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of Capalbio PDO is within the territory of the municipalities of Capalbio, Manciano, Magliano in Toscana and Orbetello in the Province of Grosseto, in the Tuscany region.
Description of product typologies
Capalbio PDO Bianco is pale straw-yellow; it is delicate, fresh and fruity on the nose; it is dry on the palate. Capalbio PDO Rosso is ruby-red, varying in intensity; it is vinous and characteristic on the nose; the palate offers a harmonious, dry, sapid and pleasantly tannic flavour. Riserva can be displayed on the label following an ageing period of at least 2 years, at least 6 months of which must be in wooden barrels. It cannot be released for consumption before June 1st of the third year following that in which the grapes were produced. Capalbio PDO Rosato is pink, varying in intensity; the nose is ample and vinous; it is dry, fruity and characteristic on the palate. Capalbio PDO Vin Santo varies from golden-yellow to amber and a few variations, such as the greenish reflections in young wines; the nose can display a predominant aroma of white and yellow flowers, freshly cut grass and unripe fruit; it is smooth and warm on the palate, at times with hints of liquorice and cinnamon. After careful selection, the grapes destined for vinification must be dried and cannot be mashed before December 1st of the harvest year and no later than March 31st of the following year; the partial drying of the grapes must take place in suitable environments, and partial dehydration with ventilated air is permitted; storage and ageing must take place in wooden kegs with a capacity of no more than 3 hectolitres, for a period of at least 2 years; the wine cannot be released for consumption before November 1st of the third year following that in which the grapes were produced.
