Bonarda dell’Oltrepò Pavese PDO is bright crimson red in colour; the nose displays an intense bouquet of red fruit; it is pleasing on the palate, with the sensation of red fruit returning and persisting in the finish. “Vivace” may be displayed on the label of wines that are sparkling due to the carbonic dioxide content, which is the result of an exclusive and natural fermentation process, according to provisions of current European regulations. Vinification must be carried out in the municipalities within the production area, although, taking into consideration traditional situations, these operations may take place within the entire territory of the Province of Pavia.
