The production area of Bianco dell’Empolese PDO is within the entire territory of the munipalities of Empoli, Cerreto Guidi, Fucecchio, Vinci, Capraia e Limite, Montelupo Fiorentino municipalities in the Province of Florence, in the Tuscany region.
Description of product typologies
Bianco dell’Empolese PDO Bianco is straw-yellow, varying in intensity; among the fragrances on the nose, there is an evident fruitiness reminiscent of apple, apricot and citrus, with faint mineral sensations; it is delicate, fresh and dry on the palate, with good body. Bianco dell’Empolese PDO Vin Santo varies from golden-straw to amber, varying in intensity; the nose is dominated by aromas of candied fruit, crème caramel and spices; it is dry or semi-sweet and smooth on the palate, with a typical aftertaste. After careful selection, the grapes used to produce the Vin Santo wine must be dried naturally; the drying process of grapes destined for vinification, within in the permitted limits of the regulations in force, must take place within suitable environments and must continue until the sugar content is no less than 28%.
