Description of product typologies
Bianchello del Metauro PDO Bianco is straw-yellow with hues of green; it displays a fairly persistent, mild and delicate fragrance of fresh fruit and white spring flowers; it is dry, very fresh, harmonious and pleasant on the palate, with a very delicate hint of alcohol. Bianchello del Metauro PDO Spumante is straw-yellow, varying in intensity, with a fine and persistent foam; the bouquet is delicate, fine, ample and motley on the nose; it is extra-dry to brut and sapid, fresh, fine and harmonious on the palate. Bianchello del Metauro PDO Passito is intense straw-yellow to amber; it is characteristic and intense on the nose; on the palate it is sweet, harmonious and velvety. For the production of Bianchello del Metauro PDO Passito, the grapes must have undergone a drying period that lasts no longer than March 30th of the year following that of the harvest; the vinification process must have been completed before November 1st of the year in which the grapes were produced. The Passito wine cannot be released for consumption before December 1st of the year following that in which the grapes were produced. Ageing must take place within the same area as the vinification process.
