The Assisi PDO is reserved for the following types of wine: White, Red, Rosé and Novello. The Designation also incorporates numerous grape variety specifications.
Production Area
The production area of Assisi PDO is within the territory of numerous municipalities in the Province of Perugia, in the Umbria region.
Description of product typologies
Assisi PDO Bianco is straw-yellow, varying in intensity; the fragrances on the nose pass from acacia flower to ripe peach, with buttery hints; it is sapid on the palate, with a long, fruity finish and aromatic undertones. Assisi PDO Rosso has an intense ruby-red colour; the cherry fragrance on the nose blends with light notes of spices and liquorice; it is embracing, sapid and harmonious on the palate. Riserva can be displayed on the label if the wine has undergone an ageing period of no less than 24 months, commencing from November 1st of the year in which the grapes were produced, of which at least 12 months must be in wooden barrels and 3 months in the bottle. Assisi PDO Rosato is pink, varying in intensity; it displays a delicate vinous fragrance on the nose; it is dry, fresh and harmonious on the palate. Assisi PDO Novello is ruby-red, with violet hues; it is fruity and persistent on the nose; on the palate is dry, harmonious, fresh and lively.
Grape variety specifications
The Assisi PDO may display the following grape variety specifications. From white grape varieties: minimum 85% Grechetto, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, maximum 15%. From red grape varieties (incl. Riserva): minimum 85% Cabernet Sauvignon, Merlot, Pinot Nero, pure or with the addition of similarly-coloured grapes originating from other grape varieties suitable for cultivation in the concerned area, maximum 15%. The characteristics of the colour, fragrances and flavour of each specification are typical of the grape variety and terroir of origin. Assisi PDO with specification of a red grape variety can display Riserva on the label if it has undergone an ageing period of not less than 24 months, commencing from November 1st of the year in which the grapes were produced, of which at least 12 months must be in wooden barrels and 3 months in the bottle.
