Description

Production Method
Production starts with the careful mixing of the ingredients to form an uniform, thick, smooth dough which is left to stand for at least 30 minutes. The closed waffle irons called andruciarki are heated to a temperature of around 180°C, and a portion of dough is placed on the hot, greased, lower plate of the waffle iron, then the two plates are pressed together. After 30-40 seconds of cooking the waffle iron is opened and the baked wafers are collected. The edges of the piled wafers are trimmed using a knife or file, giving them a circular shape. The Andruty Kaliskie PGI must be immediately packaged at the place of production in view of its fragility and susceptibility to damp.
Appearance and Flavour
The Andruty Kaliskie PGI are thin wafers with regular edges, 15 to 17 cm in diameter and 0.8 to 1.5 mm thick. Their colour is light cream to straw through to golden brown and slightly shiny. They are delicate, slightly sweet in taste, crisp, smooth and dry.
